5 Ingredient No Bake Simple Vegan Cookies (One pot, refined sugar free, gluten free)
This simple recipe is a one pot easy to make vegan cookies for breakfast or a snack. No baking required and took me 30 minutes to make in total including the cleaning up.
The ingredients are easy to find and compliments each other in this recipe.
This recipe yields 16 cookies, however I will make them smaller going forward as I feel they are rich in flavour. You will notice 4 ingredients in the picture below; I forgot to include the dark chocolate in the picture.
1 cup no sugar added or salt added peanut butter
1/2 cup organic maple syrup
3/4 cup desiccated coconut
1 cup oats
1/4 cup chopped dark chocolate
Place peanut butter and maple syrup in pot and mix until combined. Place pot on low heat, once mixture starts to bubble, add remaining ingredients. Shape into balls and flatten. Place in freezer for 15 minutes and remove and store into an airtight container.Store in the fridge.
